Pumpkin soup
Heat this soup over medium heat, stirring occasionally until hot or simply reheat in the microwave (container is microwave safe) > Place the cold ricotta in the middle of your bowl > Pour the hot soup delicately > A last minute drizzle of hazelnut, oil and chives on the top.
Sea bream en papillote
Preheat the oven to 200C (180C fan) and place the double sealed (parchment/foil) dish on a baking tray then bake for 12 minutes. Remember fish will continue to cook while resting, do not overcook > Transfer the packets onto a plate > Leave to stand for 2 mins > Cut around the folded sealing edge with scissors > A spritz of freshly squeezed lemon juice, decorate with chervil.
Tarte tatin
If you plan to eat on the day you collect, store it at room temperature and warm it with residual heat after the main(papillote) cooking is finished and the oven timer goes off, place tarte tatin on a baking tray and warm this up gently while you enjoy main dish.
To heat separately, preheat the oven to 200C(180C fan) and let it warm for 5 - 7mins.
Serve with crème fraîche and a drizzle of extra caramel.
